Thailand has plenty of green leafy things, often served raw and in large bunches. But somehow it just doesn't translate out as what you think of as "salad," does it? Try making some of these instead. They're generally short on green leaves, but big on taste (we assume).

Just to be clear, I have no idea if the recipes from the 2007 cookbook are any good or not. I'm just copying them on to the wiki pages in blind faith. Likewise, I take no responsibility for how available or scarce some of the ingredients might be; I have no idea where 117er Carolyn McGee (for instance) got her sea salt except probably in Bangkok.
